Using heritage-breed pork as the base, our production manager Brendan (previously of the Savoy and other prestigious venues) has created a stuffing to rival the best of them.

Sweet pecans to give it texture, dry-aged bacon to give it depth, fresh thyme and sage to make it sing - now that's a stuffing! And all using simple, trusted ingredients.

You can roll this into cute little balls, bake it in a dish or stuff liberally into your turkey.
