Limited Edition: Stichelton Snack Salami
In December we rounded off the 2025 charcuterie subscriptions in fine style, with a special collaboration with one of the UK’s most respected champions of British craft food (and another fellow Spa Terminus resident), Neal’s Yard Dairy.
We have long admired Neal’s Yard for their unwavering commitment to quality, provenance and traditional methods, so to weave one of their fabulous cheeses into one of our salami recipes feels like a real milestone for us.
We picked Stichelton, an award-winning raw-milk blue made exclusively for Neal’s Yard Dairy by Joe Schneider at the Welbeck Estate near Sherwood Forest in Nottinghamshire and a cheese that we have been selling at our market stalls for a while now.
We paired Sitchelton’s gentle acidity with the sweetness of pears, the earthiness of walnuts, and the deep flavours of our native-breed pork to create a beautifully balanced bite worthy of the final weeks of winter before Spring returns once again.
