There are a number of things that consistently make our smoked salmon something really special:
- The freshness & quality of the fish - our salmon is farmed in clear waters off Shetland and Orkney, we typically start working with them just 20 hours after harvest.
- The under-cure - the salmon we use is so good, and so fresh, you can eat it raw. We cure it with a simple blend of salt, juniper and sugar for a shorter time than is typical, keeping it as close to sashimi as possible. We remain the only company producing smoked salmon using this ‘under-cure’ and we adore the elegant result it gives us.
- The thick cut - we do it this way to bring it as close to premium sashimi as you could hope to get in a sliced smoked salmon.
Cure time: 18 hours in salt, sugar and juniper
Smoke time: 17 Hours
Format: Half side (650g, sliced or unsliced), whole side (1250g, sliced or unsliced), whole side split into four pieces (1250g, sliced)
Serving size: A half side serves 8-10 as part of a buffet or as a starter.
