What makes our Sashimi Grade Smoked Salmon special?
- Sourced for Excellence: Harvested from the pristine waters off Shetland and Orkney, our salmon arrives fresh at our smokehouse within 20 hours of being caught, ensuring unparalleled freshness and quality.
- Gentle Curing Process: the salmon we use is so good, and so fresh, you can eat it raw. We use a minimal curing process with a blend of salt, juniper, and sugar, shorter than typical methods. This 'under-cure' technique preserves the natural texture and flavour, hence why we call it sashimi-grade.
- Thick Cut Slices: Our salmon is thickly sliced to enhance the luxurious texture and rich flavours, reminiscent of premium sashimi, only smoked and more delicious!
Cure time: 18 hours in salt, sugar and juniper
Smoke time: 17 Hours
Format: Whole side (1250g, sliced or unsliced), whole side split into four pieces (1250g, sliced)
Serving size: A side serves 16-20 as part of a buffet or as a starter.
