What makes our Sashimi Grade Smoked Salmon special?
- Sourced from the pristine waters around Shetland and Orkney, each fish reaches our smokehouse within 20 hours of being caught. This is as fresh as salmon gets—clean, delicate, and sashimi-ready.
- A cure designed to enhance , not mask. Because the fish is exceptional, we cure it lightly—just salt, juniper, and a little sugar for 18 hours. This “under-cure” preserves the natural purity, texture, and subtle sweetness, creating the original sashimi-grade smoked salmon. Beware of the imitators!
- Thick Cut Slices: Our salmon is thickly sliced to enhance the luxurious texture and rich flavours, echoing the feel of premium sashimi - silky, rich, and melt-in-the-mouth.
Cure time: 18 hours in salt, sugar and juniper
Smoke time: 17 Hours
Format: Whole side (1250g, sliced or unsliced), whole side split into four pieces (1250g, sliced)
Serving size: A side serves 16-20 as part of a buffet or as a starter.
