A classic back bacon that is perfect for your morning fry-up, weekend brunch or bacon sandwich.
The meat is taken from the loin of our responsibly farmed heritage breed pigs sourced from the same superb supplier who provides the pork for our charcuterie. With a fantastic depth of flavour to the fat, these beautiful animals are perfect for our premium, top quality bacon.
This is proper, artisanal bacon, cured and crafted by hand, so we definitely do not inject any water or brine into our bacon (sadly a common practice). Quite the opposite in fact: the naturally lean meat is traditionally dry-cured and hung in our ageing chamber for over a month, during which time it is smoked twice over oak and beech.
This long-duration ageing dries the meat to intensify the flavours which, when combined with a total of 36 hours of smoking, transforms it into a bacon that is wildly different to what you might find in your local supermarket, and if you are a fan of crispy bacon, then a properly aged bacon is what you are looking for.
It comes in two varieties:
Aged Smoked Back Bacon: A superbly flavourful traditional back bacon, dry-cured with pepper, juniper and bay with smoke that doesn't overpower.
Aged Smoked Black Back Bacon: A dark, caramelised and complex bacon, traditionally dry-cured but also marinated in thick, black British molasses before it is air-dried and smoked over oak and beech wood. Great Taste 2* award-winning bacon.
Available in two pack sizes: 170g or 700g.
